Ingredients

Core Ingredients

  • 1.5 lbs 680g flank steak, thinly sliced against the grain
  • ½ cup 120ml cola (not diet)
  • cup 80ml low-sodium soy sauce
  • 3 tablespoons brown sugar
  • 4 garlic cloves minced

Optional Flavor Enhancers

  • 1 tablespoon sesame oil
  • 1 teaspoon freshly ground black pepper
  • 1 small onion grated
  • 1 tablespoon gochujang Korean chili paste
  • Toasted sesame seeds and sliced scallions for garnish

Instructions

Prepare the Marinade

  • In a large bowl, whisk together cola, soy sauce, brown sugar, minced garlic, and grated onion (if using).

Marinate the Beef

  • Add the thinly sliced flank steak to the marinade. Massage gently to ensure even coating. Let it marinate at room temperature for 10 minutes.

Sear the Beef

  • Heat a cast-iron skillet or heavy-bottomed pan over high heat until smoking. Add a tablespoon of oil.
  • Working in batches, sear the beef slices in a single layer for 1–2 minutes per side until caramelized. Avoid overcrowding the pan.

Reduce the Marinade

  • Pour the remaining marinade into the skillet. Bring to a boil, then reduce heat and simmer for 3–5 minutes until the sauce thickens and becomes glossy.

Combine and Finish

  • Return the seared beef to the skillet, tossing to coat evenly with the reduced sauce. Cook for an additional 1–2 minutes to meld flavors.

Garnish and Serve

  • Transfer the bulgogi to a serving platter. Garnish with toasted sesame seeds and sliced scallions. Serve hot with steamed rice, lettuce wraps, or your preferred sides.

Notes

  • Meat Selection: For optimal tenderness, partially freeze the flank steak for 30 minutes before slicing. This makes it easier to achieve thin, uniform slices.
  • Marinade Alternatives: If cola is unavailable, substitute with ¼ cup apple juice and 1 tablespoon vinegar for a similar tenderizing effect.
  • Spice Level: Adjust the amount of gochujang to control the heat level according to your preference.
  • Serving Suggestions: Pair this bulgogi with kimchi, pickled radishes, or incorporate it into fusion dishes like tacos or rice bowls for a creative twist.
