Kimchi Avocado Toast

A Korean-American fusion breakfast staple. This dish mashes creamy avocado with spicy kimchi on sourdough for a crunchy, tangy, flavour-packed bite. Great for fans of quick kimchi recipes!

Ingredients
  

  • 1 slice sourdough bread toasted
  • ½ ripe avocado
  • 2 tbsp kimchi chopped
  • 1 fried egg optional
  • Sesame seeds + drizzle of sriracha (or gochugaru)

Instructions
 

  • Toast a slice of sourdough.
  • Mash ½ avocado with a pinc.h of salt.
  • Spread it over the toast.
  • Top with 2 tbsp chopped kimchi.
  • Add a fried egg (optional).
  • Garnish with sesame seeds and a drizzle of sriracha or chili oil

Notes

Pair with iced coffee or barley tea for a light, satisfying 10-minute Korean meal.
