Ingredients
  

For the Sauce:

  • 2 tbsp olive oil
  • 2 garlic cloves minced
  • 1 cup 240ml tomato puree
  • 1 cup 240ml heavy cream
  • 1 tsp beetroot powder or 2 tbsp beetroot puree for pink color
  • Salt and pepper to taste
  • 1 tsp dried basil or oregano

For the Pasta:

  • 12 oz 340g pasta of choice (penne, fettuccine, or spaghetti work well)
  • Grated Parmesan cheese for serving
  • Fresh basil or parsley for garnish

Instructions
 

Step 1: Cook the Pasta

  • Cook the pasta according to package instructions until al dente. Drain and set aside.

Step 2: Make the Pink Sauce

  • Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  • Add tomato puree and cook for 3-4 minutes, stirring occasionally.
  • Stir in the heavy cream and beetroot powder/puree until the sauce turns pink.
  • Season with salt, pepper, and dried basil or oregano.

Step 3: Combine Pasta and Sauce

  • Add the cooked pasta to the skillet and toss until evenly coated with the sauce.
  • Cook for an additional 1-2 minutes to let the flavors meld.

Step 4: Serve

  • Plate the pasta and top with grated Parmesan cheese and fresh basil or parsley.

Notes

  • Natural Coloring: Use beetroot powder or puree for a natural pink hue. Avoid artificial food coloring if possible.
  • Vegan Option: Substitute the heavy cream with coconut cream and use vegan Parmesan.
  • Add Veggies: Sauté mushrooms, spinach, or zucchini to add extra flavor and nutrition.
