For the Sauce:
- 2 tbsp olive oil
- 2 garlic cloves minced
- 1 cup 240ml tomato puree
- 1 cup 240ml heavy cream
- 1 tsp beetroot powder or 2 tbsp beetroot puree for pink color
- Salt and pepper to taste
- 1 tsp dried basil or oregano
For the Pasta:
- 12 oz 340g pasta of choice (penne, fettuccine, or spaghetti work well)
- Grated Parmesan cheese for serving
- Fresh basil or parsley for garnish
Step 2: Make the Pink Sauce
Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
Add tomato puree and cook for 3-4 minutes, stirring occasionally.
Stir in the heavy cream and beetroot powder/puree until the sauce turns pink.
Season with salt, pepper, and dried basil or oregano.
