Ingredients

  • 2 packs ramen noodles
  • 1 cup shredded cooked chicken rotisserie or pre-cooked
  • 2 tbsp sriracha
  • 1 tbsp honey
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1 cup shredded Colby Jack cheese

Instructions

Boil noodles

  • Bring a medium pot of water to a boil. Add ramen noodles and cook for 3 minutes until tender but still firm. Drain and set aside.

Whisk sauce

  • In a mixing bowl, combine sriracha, honey, paprika, and garlic powder. Mix well.
  • Toss noodles and chicken
  • Add hot noodles and shredded chicken to the sauce. Toss to coat evenly.
  • Add cheese
  • Transfer the mixture to an oven-safe dish. Sprinkle shredded Colby Jack cheese on top.

Broil or microwave

  • Broil for 2-4 minutes until cheese is bubbly and golden, or microwave for 30 seconds to melt.

Serve

  • Let cool slightly and enjoy!

Notes

  • For extra heat, add more sriracha or a pinch of red pepper flakes.
  • Use leftover rotisserie chicken to save time or substitute with tofu for a vegetarian option.
  • Broiling cheese adds a nice crispy texture, but microwaving is a quick alternative.
  • Feel free to add vegetables like spinach or mushrooms to boost nutrition.
  • Store leftovers in an airtight container in the fridge for up to 2 days; reheat gently to avoid drying out.
