Ingredients

The Core

  • 1 lb 500g ground beef
  • 6 –8 Old El Paso crunchy taco shells
  • Optional vegetarian swap: Beyond Meat tofu crumbles, or lentils

The Marinade

  • 3 tbsp soy sauce
  • 1 tbsp gochujang or 1 tsp ketchup + 1 tsp sriracha + ½ tsp smoked paprika
  • 2 cloves garlic minced (or 1 tsp frozen garlic cubes)
  • 1 tbsp brown sugar

The Toppings

  • 1 cup shredded lettuce iceberg or romaine
  • Kimchi store-bought or from The Ultimate BTS Kimchi Fried Rice Hack
  • Kewpie mayo or mix mayo + a dash of rice vinegar + sugar
  • Sesame seeds or chopped green onion for the ✨ aesthetic ✨

Instructions

Marinate the Beef

  • In a bowl, mix soy sauce, gochujang (or your ketchup-sriracha hack), garlic, and brown sugar. Add the ground beef and let it marinate for 10 minutes (just enough time to queue your SKZ playlist).

Cook Like a Chef

  • Heat a skillet over medium-high heat. Sauté the beef until fully cooked and edges caramelize (about 8–10 minutes). Use cast iron if you have it—it gives that smoky, BBQ-style edge.

Assemble the Tacos

  • Warm taco shells in the oven at 350°F (180°C) for 2–3 minutes. Then layer with beef, lettuce, kimchi, and drizzle with Kewpie mayo. Sprinkle sesame seeds or green onions for the final K-pop touch.

Notes

  • No gochujang? The ketchup + sriracha + paprika hack works shockingly well.
  • Make it a meal: Serve with instant rice, kimchi pancakes, or a fizzy Korean-style soda (even if it's Sprite).
  • K-pop party idea: Set up a taco bar and stream SKZ content while you eat.
  • Storage: Leftover beef keeps for 3 days in the fridge—use it in rice bowls or lettuce wraps.
